Since you are a restaurant owner in the city of Cognac, you work with cognac every day. You have many producers and houses that request meals with cognac pairing. What ‘s your What is the ideal cognac-food pairing?

A.V. An appetizer or main dish. Savory food in any case. From an aromatic perspective, I think that cognacs go well with shellfish, lobster and langoustine. For the application, we created a duck tartare with a cream of smoked cod that goes very well with cognac.

A.V.  I really like working with vegetables.

 

Can you imagine vegetables in the Cognac Pairing application?

A.V. Why not a whole celery root that is steamed on the inside and roasted on the outside? The aromas would include toasted notes that would go perfectly with cognac.

 

Anything to say about the new Cognac Pairing app?

A.V. The Cognac Pairing application aims to popularize working with cognac. I think it will launch a new dynamic and we will be surprised by the passion it creates!
